Bow Tie Pepperoni Pasta Salad

Ingredients
16 ounces bow tie pasta
1 (3 ½ ounce) package pepperoni
1 cup Italian salad dressing
½ cup grated Parmesan cheese
½ teaspoon Italian seasoning
Cooking Instructions
Bring a large pot of lightly salted water to a rolling boil.
Add the bow tie pasta and cook 8 to 10 minutes, until al dente. Drain fully and set aside to cool slightly.
While the pasta cooks, brown the pepperoni in a skillet over medium heat until crisp on both sides. Transfer cooked pepperoni to a paper-towel lined plate to drain excess grease.
Toss the cooled pasta together with the crispy pepperoni, Italian dressing, Parmesan cheese, and Italian seasoning until evenly coated. Chill before serving if you prefer a cold pasta salad.

I was looking for a potluck-friendly recipe that didn’t use mayonnaise — mayo spoils so quickly in warm weather, and on top of that, my oldest son no longer enjoys mayo. We added quartered cherry tomatoes plus fresh chives and basil from our garden, and it turned out fantastic. This recipe is quick, easy, and super versatile: you can toss in almost any vegetable you have on hand, or skip the pepperoni entirely if you don’t have any. We’ll absolutely make this again.
I thought this was just okay, but none of my kids liked it at all. I do think it would be much better with added chopped veggies, such as tomatoes or green bell peppers. I may try it again with those additions eventually, but not any time soon. I’m glad I only made a half batch, otherwise we would have thrown the rest out.
UPDATE TWO DAYS LATER :) I added grape tomatoes to the leftovers and it was absolutely superb! I’m making it again this weekend for another potluck.

Delicious! I had half a bottle of regular Italian dressing and half a bottle of creamy Italian, so I combined them and added a pinch of salt at the end. I originally made this as a side for dinner, but with four pasta-loving kids, it was all gone before lunch even ended!
