  • 2 cups all-purpose flour

Instructions

  1. Combine all dry ingredients in a large mixing bowl

  2. Stir cranberries into the dry mixture to coat evenly

  3. In a separate bowl, whisk together the egg, orange juice, vegetable oil, and grated orange rind until fully combined

  4. Pour all wet ingredients into the dry bowl at once

  5. Stir only just enough to moisten the batter (do not overmix)

  6. Spoon batter into greased muffin cups, filling each ¾ full

  7. Sprinkle a light dusting of extra sugar over the top of each muffin

  8. Bake at 400°F (200°C) for 15-20 minutes, until tops are lightly browned and firm to the touch
