  • 1 cup pureed cooked sweet potato

  • 3 tablespoons neutral cooking oil

  • 2 teaspoons grated orange rind (orange zest)

  • 1 tablespoon granulated sugar


Step-by-Step Instructions

  1. In a large mixing bowl, combine the flours, baking powder, and spices, and stir until evenly mixed.

  2. In a separate medium bowl, whisk together the egg yolks, milk, sweet potato puree, oil, and grated orange rind until smooth.

  3. Pour the wet ingredient mixture over the dry ingredients. Stir gently only until all ingredients are just moistened (overmixing will result in dense, tough waffles).

  4. In a clean bowl, use an electric mixer to beat the egg whites until soft peaks form. Add the sugar, and continue beating until stiff, glossy peaks form.

  5. Gently fold the beaten egg whites into the batter to keep it light and fluffy.

  6. Preheat your waffle iron, and lightly grease the nonstick surface if needed. Pour the prepared batter onto the heated iron.

  7. Cook until the waffles are golden brown and the waffle iron stops releasing steam, roughly 5 minutes per batch.
