Photograph by Jonathan Melendez

Quick Recipe Overview

  • Total Ready Time: 5 minutes

  • Yield: 8 bite-sized rolls

  • Easily scaled up for groups

Ingredients

  • 2 slices soft sandwich bread

  • 2 tablespoons creamy peanut butter

  • 2 tablespoons jelly or fruit preserves (any variety you prefer)

Step-by-Step Instructions

  1. Trim all crusts off the bread slices. Use a rolling pin (or a large full soup can, if you don’t have a rolling pin) to flatten each slice completely into a thin, even sheet.

  2. Spread 1 tablespoon of peanut butter and 1 tablespoon of fruit spread evenly over each flattened bread slice.

  3. Roll each slice into a tight spiral log. Cut each log into 4 equal pieces, and your snack is ready to serve!

Here’s what fellow cooks have to say after making this fun twist on a classic:

“These are so good and such a fun activity to make! I have a few tips to make the process easier: Microwave your peanut butter for a few seconds to make it spread more smoothly, stir your jelly first to break up any big chunky bits. Only spread jelly on a little more than the bottom half of the bread slice, and leave the final sealing edge just coated in peanut butter. After rolling, rub the log back and forth between your palms to seal it shut, and pop the whole rolls in the freezer to harden a bit before slicing—this makes cutting clean slices so much easier. Wipe your knife with a damp then dry towel after cutting each roll too. We had a blast making these, and everyone got such a kick out of the idea. Super yummy!”

“I had three hungry grandkids to entertain and needed something quick. This recipe kept everyone busy and happy, and saved my sanity. Thank you!”

“LOVE LOVE LOVE this! I made these for my 7-year-old’s lunch, and she was so excited to bring them. I kept the full uncut rolls in the fridge overnight and sliced them in the morning, and they were way easier to cut cold. Next time I’ll make extra, because all my daughter’s friends wanted a taste! This would be so perfect for a kids’ party or potluck.” 🙂

“I make these all the time for my son! Sometimes we add extra fillings like sliced banana, which works really well. You can freeze these too—just pull them out and pack them frozen in a bento or lunchbox, and they’ll be thawed and ready to eat by lunchtime! This method also works great with all kinds of other sandwich fillings.”

“I loved this fun recipe. It’s so easy, and such a more exciting way to eat a PB&J sandwich.”

One home cook shared a genius twist on the concept:

“This is fun and different for a PB&J, but for a true PB&J ‘sushi’ roll, you have to use a ‘rice’ base made from Rice Krispie Treats! I created Fluffer Nutter Sushi Rolls for our local Japanese restaurant— I spread peanut butter and marshmallow fluff over a flattened rectangle of rice crispy treat, rolled and sliced it. The Japanese owner and head chef loved the innovation so much he added it to his restaurant’s kids’ menu!”
